5" Penetration Probe

This general purpose probe is popular in the food industries and is a little more rugged than the Fast Response Probe. The 1/8" diameter shaft is swaged to a smaller diameter and given a very sharp tip for easy penetration in most semi-solids. Probes are available in a 5" stem or a longer 12" stem, which is great for reaching over hot grills, into large ovens, rotisseries or deep pots; also suitable for liquids and air temperatures. It's very durable probe resists bending and breaking (for frozen foods consider heavier duty probes) and is recommended for hard daily use. Fairly quick response time takes only about 7 seconds to a complete reading.

Fast Response Meat Needle Probe

Originally designed for measuring burgers, steaks and thin meat portions, this probe is often chosen for other purposes because it's diameter is smaller than our handheld needle probe and it's a bit quicker while leaving an even smaller hole. The 3.35" length allows you to reach the center of even a large burger when entering from the side, or it will reach the center of roasts for an extremely fast measurement. An optional detachable coiled or straight extension lead is also available.

This probe is great for very small samples and speedy response times (reads in only 2 seconds). The PTFE cable and sealed junction allow you to immerse the cable and probe in ovens or other cooking processes and can withstand oven temperatures so you can close the cable in an oven door. The Miniature Needle Probe is a Great choice for Sous Vide cooking however, the cable can be damaged by direct contact with flame or if temperatures exceed 500°F. Available in two lengths.

Burger Probe

The burger probe is designed for the busy fast food kitchen. A fine gauge needle tip reads meat temperatures very quickly and without a "heatsink" effect that would reduce the true temperature. A stainless steel disc is affixed to the probe which acts as a built-in depth gauge to ensure the correct insertion depth (1/4") each and every time.

This probe is a good choice if you want a budget solution or want a lower cost replacement solution. Smoke House Penetration Probe - Stainless Armor

Penetration probe used by commercial smokehouses. The 78" cable is covered by a flexible stainless steel armor and has a wider temperature range. It will survive longer than other probes when stepped on, manhandled, kinked, slammed in doors or exposed to the higher temperatures of outdoor grills. It should be protected from direct exposure to flames and should not be immersed past the stainless probe section. The armor is not easily closed in a regular home oven door, so choose a different probe for standard kitchen use. You can still break this probe if you try, but it is the toughest probe available to backyard grillers.
