Fine probe & short

"I bought this specifically because it is short so end of probe doesnât go into air on other side of food. Huge bonus that it also has a fine probe body. A cooks secret weapon on thin foods."

Solved my Salmon issue!!

"I realize everyone cooks their salmon in their own special way that works best for them, but the way I like to do it is pan sear for 3 1/2 minutes on one side, flip it over for another minute or so on the other side. The salmon then goes on to a baking sheet into the oven at 325 to hit a target temperature of around 113°F. Once rested, it should reach about 125 which is what my preference is. The issue using the RFX units is that the salmon temperature changes so quickly in the oven that they cannot keep up time wise to react quick enough so thatâs why I picked up a âSmokeâ unit and use that with the direct probes to keep up with the changes. So now I discovered that I needed a 2 1/2â needle probe to catch the center of the filet! Itâs worked perfect in this case as well as when finishing Filet Mignon in the oven where the RFX Probes are too long!! Sometimes different things require different tools!!"
