Monitoring Reverse Sear Prime Rib

"For this last Christmas I cooked two 9 pound boneless prime rib roasts (we had a very large group). I thought I might have to cook three smaller roasts so I ended up buying two probes to complement my DOT. I used the DOT oven sensor to monitor the oven, and alternated between the two high temp probes so I could monitor each roast independently without having to open the oven and do any probe swapping - I could just swap at the DOT. Perfect information to keep me informed on the internal temperatures resulting in another beautiful reverse sear meal."

This model has failed on me 3 times

"I won't be buying this particular probe from TW again. I've had 3 that simply stop working. The third and last one was brand new out of the package first cook. Was doing a reverse sear rib-eye and this probe was working fine at 250ú and when I took the steak from the oven and moved the probe, it failed. Simply gone. Tried it in 2 other thermometers, same result. That's about par for the course for the other two as well. I don't have this issue with several other probes from TW."

Keep needing to replace

"A bit frustrated as I keep having to replace these. I'm very careful to not pull on the cord and keep the base away from flames/heat/+700 degree temps. Was using one the other night and it was registering a temp and then it just stopped. Plugged it into the 3 other outlets in my smoke + in my dot square - it's just dead. You can see from the picture the thing looks hardly used. I don't submerge and take extra care when rolling the cable up not to twist or kink it. When these work, they are great, but durability leaves a lot to be desired. . . ."
